I discovered a great new recipe at Earthapalooza (Bryant H.S.'s green celebration). The National English Honor Society's booth focused on eating organic and local produce, so we made up little cups of yogurt parfaits using organic yogurt, granola, strawberries, and honey. This has become my favorite summertime treat. I made some last night for dessert for E.O. when she came over to help me bake cookies for my kids (YES! we chose yogurt instead of cookies, that's how good these are) and I ate another one this morning for breakfast.
The granola is a recipe that I got from one of my students, she brought it for Earthapalooza and I begged for her mom's recipe. :)
Yogurt Parfaits
Stony Field French Vanilla Yogurt
Granola
Strawberries
Honey
Start with the yogurt, then follow with a layer of granola (recipe below), next a layer of sliced strawberries, and finish with a drizzle of honey over all. Delicious!!!
Granola
Ingredients:
3 cups oatmeal (old-fashioned)
1 cup sunflower seeds
1 cup coconut
¼ cup melted butter
¼ honey
1 teaspoon cinnamon & salt
Preparation:
Mix oatmeal, sunflower seeds, & coconut in rectangular baking dish. Mix together butter & honey and pour over granola mixture. Mix until evenly spread. Sprinkle salt and cinnamon over mixture and stir. Bake at 350 until lightly brown. Stir.
*Delicious with yogurt parfaits!!!
